Nicki has been a vegetarian since she was 15 years of age. Nicki also has an enduring interest in yoga, she is a qualified yoga teacher, teaching a number of groups on the Gold Coast.

She completed her apprenticeship in commercial cookery in 1995. Her passion for good food came about a few years after finishing university in Lismore. It was then she started to explore her culinary curiosities while spending time in Byron Bay. In 2004 she stumbled across raw food and she couldn't believe how amazing the food made her feel.

This inspired her to begin her raw food business called from earth and water. Nicki now embraces a raw food diet, and believes that everyone can include a little more raw in their existing diets.
